Sencha is one of the best known green tea types, orginally consumed by Buddhist monks as a source of inspiration and vitality.

Sencha means steamed tea : Sen = steam, Cha = tea.

Firstly the tea leaves are folded lengthwise while drying on warm trays. Then they are heated on wood fuelled pans in order to stop the fermentation.

After infusion the full leaf can be seen, and the tea drink has a bright yellow colour. The fresh grass like flavour with fine sweetness is what makes Sencha a favourite green leaf tea.
